Our Healtheir Recipe Mom Brooke! An everyday Hero Hero

 

A few years back, Brooke’s toddler was newly diagnosed with Diabetes Type 1.  As she was desperately searching for healthier sugar free products and recipe ideas, she landed on the Kid Kritics site and signed up to be a Healthier Recipe Mom.  That’s how I “met” her.  I was immediately impressed with how proactive she was.

Brooke’s big challenge was just beginning; she had to pay total attention to every meal she prepared, reading labels of every product she purchased. Taking care of her son’s health became a full time job. Complicating this task was her limited food budget.

Eleven months later, another level was added to Brooke’s challenge. Her son was also diagnosed with Celiac Disease. Now she faced another dietary adjustment for her little guy and thus her family. Not only would she have to count her son’s carbohydrate intake, monitoring blood sugar, she would also have to study the source of his starch intake.

Recently Brooke described to me how much more difficult it was to adapt to the gluten free lifestyle versus the diabetes diagnosis. It seemed her son could no longer eat anything he liked – all wheat, rye, barley, oats were out of the question. Adding to this stress was the reality that family outings such as, church potlucks, eating at friend’s house and any restaurants would now be very limited.  But again, she took charge and decided her family would all go gluten free to avoid any dangerous cross contamination in the house. And, she wanted to eliminate the struggle keeping her child from eating gluten foods stored in their home.

Digging through gluten free brands, Brooke discovered that a gluten free diet of processed foods can be very expensive; most gluten-free convenience items are “fluff”, processed and very low in nutritional value. Plus she learned that most gluten free products have higher carb content than regular versions, making it harder for her to manage her son’s insulin regimen.

There is a silver lining in this picture. Brooke noticed changes in herself when she transitioned to a gluten free diet as well: she had more energy! Plus, her family is definitely eating healthier morning, noon and night.  She now relies on serving a lot of affordable fresh produce and home cooked meals. Without a doubt, Brooke now excels at creating and adapting delicious healthy recipes for her family!

More great news. Brook’s son has been a “champ” with the transition. Because he understands how much better he feels, at only 3 ½ years old he rarely puts up a fight if he can’t have something with gluten. Another plus – he has already become really good at asking people if something has gluten in it before he will take a bite.

Brooke is an amazing mother! She has so much on her plate and deals with it with strength, positive attitude and love. It is our honor to have Brooke as part of our “Healthier Recipe Mom” group. Using qualifying ingredients for restricted diets, she creates “good tasting” recipes the whole family enjoys!

How much of your Food Budget is spent at Restaurants?

Apparently Americans spend nearly half of their food dollars at restaurants.  That totals about $566 billion in a year! (National Restaurant Association, 2009) Wow. This leaves me speechless, especially for two reasons:  a lot of that is spent on low-nutrient, disease promoting fast food, and, the nutrition and behavioral benefits of eating home cooked meals at home way exceeds the convenience of eating out.  Now moms, please, I understand the lure of  a quick breakfast, lunch and dinner solution  -  I was a working single mom for years and have experienced the related time issues.  However, the health of children holds a greater value than succumbing to the ease of fast food restaurants. I hear moms saying, "I just have to spend less on food."  I say to you, spend less on having someone else prepare food – buy and prepare it yourself. Then enjoy a good meal at a restaurant once in a while.

Pink Slime. What is it?

Pink Slime is the either Boneless Lean Beef Trimmings (BLBT) or Lean Finely Textured Beef (LFTB) that is created from low quality beef trimmings and connective tissue, and is treated with ammonia hydroxide (ammonia and water) to kill bacteria.  It is used in ground beef – may represent up to 25% of patties. The problem is that you didn't know this was added to the ground beef products you have been buying.  We don't like to feel violated.  Maybe you would be okay with spending less for this mix of beef and fat if you knew this was added to reduce the price.  Having the facts is essential for your decision process. Some beef companies said they are eliminating pink slime from their products. Schools are also moving to remove it from their meals. Makers of pink slime are reportedly shutting down some the production plants. Hue and cry does work!  So does voting with your pocket book.

Another truth: ammonia hydroxide is found in many processed products – baked goods, cheeses, chocolate, snack foods, jam, jellies, pudding and more.  This is why we recommend eating fewer packaged and more fresh foods.

As you know, organic and grass feed beef is the best.  You get more with every bite – a little goes a long way.  Eat less and get more for your money.

Do you Throw Out $500 to $2000 of Food every Year?

Research says you do. Yearly you trash: Milk & Yogurt: 13%. Grains: 14%. Fruit & Juices: 16%. Vegetables: 25%*  Rest: non-perishables. A number one reason is we buy too much – overstock – that means lack of planning. I would add that with good intentions, moms buy fresh vegetables but then do not prepare and serve them bowing down to a number of excuses… time especially.  Please pay attention to what you are buying: those who make grocery lists waste less.

It doesn't help that fresh vegetables are off to a bad start thanks to the constant spraying by stores. They are dripping wet when you put them into your cart… a recipe for decay.  These need to be wrapped in paper towels for moisture absorption while being refrigerated.  Then washed and dried before use.  I know, it takes time.  To avoid this issue, I reach for those stacked in the back, buy from Fresh Product Markets and try to grow some of my own. If you see some vegetables on the verge of going bad, throw them in the freezer for later use in omeletes, casseroles, sauteed dishes, and soups. 

Another thought: weekly, check those back corners of all the shelves in your refrigerator.  That's where the forgotten gets shoved and stays awhile.  I am often surprised at what I find in these darker places.  Wish they would invent rotating shelves… !

They say that only 12% of contents in refrigerator-freezers are leftovers*… that's really low. Does this mean you are throwing out too much, or, your family is eating all the food your prepare for them?  I'll bet some of these leftovers are "doggy bags."  Even in this economy, "spending on restaurants and take-out meats still makes up about half of food expenditures."*

We love leftovers in our home.  They open the door for lunches and subsequent dinners. Bottom Line: Leftovers can save you time and money  – all $500 to $2000 of it.

Start Eating for your Baby BEFORE you are Pregnant!

Prepare your womb with good eating habits before you are pregnant.  When you test positive for pregnancy you are already at least 2 weeks along.  So stop with the smoking, drinking and drugs well before you conceive to give your baby his or her best odds. Did you know – Chicken McNuggets contain a “deadly” chemical preservative?

We are starting a Did You Know series.  This first one is a whopper.  It is reported that Chicken McNuggets are 50% chicken and 50% "corn derivatives, sugars, leavening agents and completely synthetic ingredients.  Two include: dimethylpolysiloxane anti-foaming agent made of silicone, and, tertiary butylhydroquinone (TBHQ) "a chemical preservative so deadly that just five grams can kill you."  Holy smokes.  Well, you say, there aren't  5 grams of TBHA in a serving.  That's no excuse.  Every bit adds up. How many times a week do your kids eat Chicken McNuggets?  How many weeks a year?  PLEASE, take a stand for your children and vote NO with your pocketbook…

Some Good News on Sugar

Some restaurants and packaged food companies are "bowing to consumer concerns about HFCS (high fructose corn syrup) and replacing the sweetener with sugar…. It's so hard. It's in everything." True. From ketchup to oyster crackers, HFCS has been the sweetener of choice for decades. Finally, many are waking up to the reality this needs to stop due to the research associating it with cancer and more. Sugar cane crystals are still sugar but are at least less processed. This change will up their prices since part of the appeal of HFCS was how cheap it was as an ingredient. Still, this is a good move and you can thank those who spoke up and said, "We don't want it." Keep speaking out…
