Recipe! “Breakfast Cereal Muffins with Apples”

Moms, this is a great recipe!  Lisa, mother of two, used Cinnamon Puffins (Barbara's Bakery), added a shredded apple and Oh, My, Goodness!  Yummy and Satisfying.  Lisa said, "These taste best warm from the oven." True.  And, they are great at room temperature as well. The 3 boys I made them for last week wolfed them down.  I barely escaped with one to enjoy myself!  Serve them for breakfast, lunch and snacks – plain, with butter, jam and/or cream cheese.  Simply go to www.KidKritics.com and see this featured on the homepage.  Be sure to use paper shells so you don't have to scrub the muffin pan… I really don't like spending time scrubbing any pans, much less these.  Double the recipe and freeze some for the future.  Turn it into a loaf by choosing to use a bread pan.  Enjoy!

Performance Food: Mint fuels just about everything!

Your brain, blood, bones, ears, eyes, hair, heart, lungs, mouth/teeth, muscles, nails, nerves, nose, and skin are all fed by the nutrients found in mint.  Put a sprig in ice water, lemonade or tea. Place some leaves in your summer salads.  Stir minced mint leaves into your freshly steamed vegetables just before serving.  Use mint oil when baking.  Mint not only smells irresistable, it brightens up the flavors of your food and drinks.  Everyone loves the flavor of mint. Enjoy it all summer!

Performance Food: Peas fuel your Hair, Heart and more!

Peas are filled with nutrients that feed your brain, bones, ears, hair and heart!  They are seeds grown in a pod and technically are fruit.  However, they are commonly labeled as vegetables.  Sun ripened ones are tender and sweet.  Whether fresh or frozen, the best way to cook them is to bring water to a boil, put your peas in the water, turn off the burner and let the peas sit for about three minutes. Gently strain and put them in a bowl with a little butter and sea salt.  Serve.  To make them even better, stir in some freshly chopped mint leaves.  Hmmm good.  Ellen's kids learned to love peas when they picked some fresh from a garden. They became life-long fans.  Look for some fresh peas in a farmer's market.

Recipe! Turkey Meatballs & Spinach Pasta by Shelley

  HEALTHY RECIPE MOMS!

Shelley, mother of two, created this Turkey Meatballs & Spinach Pasta recipe.  (Featured on www.KidKritics.com)  "Plainville Farms turkey burger is the best turkey burger I have ever tried. It does not have an aftertaste and it cooks up very lean. My whole family was very impressed!"  I made Shelley's recipe and have to say, the juicy tasty meatballs are even better when combined with the finely chopped tomatoes, basil (the calming herb), and parmesan cheese topping.  Shelley's family loved it and odds are, so will your kids.  If anyone balks at the green stuff, let them pick it off.  They'll end of eating greens anyway as there are bits of spinach in the meatballs.  Be sure and try this recipe.
