Use an Ice Chest as a Heat Chest!

Use an Ice Chest has a Heat Chest! When you need to keep a roast or casserole hot while outside, before serving, put it in an empty ice chest. It will insulate the heat. Am I the only one who hasn't thought of this? Thank you Matt Flanagan (Shelton's Poultry) for this tip. For more, listen to Grilling Tips on today's Better Food Choices radio show on iTunes – it's a great show!

Grocery List: The NEW Dirty Dozen

Apples have moved to the top of the Dirty Dozen list.   This is because he USDA found pesticide residue in 98% of apples tested.*  Here is the complete list starting with the worst: Apples, Celery, Strawberries, Peaches, Spinach, Nectarines (imported), Grapes (imported), Sweet bell peppers, Potatoes, Blueberries, Lettuce, Kale/collard greens. Sad to see strawberries as number three.  Fortunately, apples, celery, spinach and lettuce are readily available as organic without staggering prices.  Do you best with the others.

Recipe Alert! Pineapple Mango Parfait with Cookie Dippers

Oh My Gosh. Incredible.  Scrumptous.  So easy.  It makes you look like a professional dessert chef!  I made this yesterday, in minutes, and thought I would take just one bite.  I ended up eating the whole thing – layers of Greek pineapple yogurt, slices of mango and a little unsweetened coconut on top.  You can use any low sugar fruit yogurt and fresh fruit combination. We have Healthy Recipe Mom, Stacy, to thank for this refreshing summer treat!  She says, "You could break [the cookies] up on the top or the bottom but they are such cute shapes that I didn't want to do that.  Again, the kids liked the dipping.  We sure are enjoying these cookies (Snackimals, Wheat-Free Oatmeal) and will have them as a staple item in our pantry from now on.  I used them in the kids' lunches and they love them for snacks.” (mom of 2). Impress you family and friends. For the exact recipe, please go to www.KidKritics.com. Great for summer parties!

Performance Food: Tongol Tuna fuels your muscles, skin and more!

Tongol Tuna is full of nutrients which feed your brain, blood, bones, eyes, mouth/teeth, muscles, nails, nose (sense of smell) and skin!  Why Tongol Tuna?  Because it is a small species and consequently is low in mercury. You can feel more comfortable serving this to your family than any of the other kinds of tuna fish.  I enjoy tuna salad weekly, as I need the power of its nutrients, especially its oils. To  make a little go a long way, use it in a casserole, make tuna tacos, or mix it with a grain to make a meatballs or grilled burgers!

Radio Gem: Cool Summer Snack Idea!

Julie from Georgia reminded us of a great summer snack idea.  Use a melon baller and scoop out bite sizes of watermelon, cantaloupe, honeydew or any melon.  "The kids love the shape and can just pop these pieces in their mouths!"  Perfectly refreshing for a hot summer day.  And, what a great budget saving idea.  If you don't have a melon baller, go get one.  Your kids would have fun making these. Melon balls are very portable for day trips and camp lunches!  (For more Summer Snacks for Your Budget ideas, listen to this show on iTunes – Better Food Choices.)

Wash Your Hands! Prevent Food Illness

Twenty seconds with a little soap and water can reduce your family’s chances of becoming sick from food.  “Consider it (food) contaminated when you bring it in the house.” *  According to a survey by the International Food Information Council, fewer people are washing their hands before handling food at home.  Prevention is so simple.  Washing the food and handling it with care is also important.  But at least wash your hands!
