Did You Know, you touch your face about 15 times an hour?

More specifically, on average, we touch our eyes, nose and lips 15 times an hour*.  I will confess that sometimes I probably exceed that by about 5 times, especially if you add ears and hair to this list.  Now that you know this, pay attention to how many times you spread germs this way.  Kids do this too.  No wonder we get colds and flues.  Start observing and try to curb this habit.  My eyes, nose and lips are safe when I am gardening, swimming, and washing dishes, not when I am typing.  I need to change my ways… how about you?

Performance Food: Apples fuel your Brain, Mouth/Teeth and more!

Keep the doctor away with apples!  Their nutrients feed your Brain, Bones, Hair, Heart, Mouth, Teeth and Skin. Apples are a moms best friend because kids love them. Eat them whole, in sections, as slices and grated.  Eat them with nut and seed butters, in wraps, salads, cereals, fruit cups, kabobs, grilled sandwiches, subs, soups, pies and as toppings.  Apple sauces, especially when combined other fruits (no sugar added, please) are great breakfast, lunch and snack items. Mix some in yogurts.  Cook apples in whole chicken and turkey cavities to enrich the juices.  Always have a few apples in your kitchen.  This is apple season – means better prices. Think ahead and buy some to freeze for winter cooking. Unfortunately, apples are heavily sprayed so try and buy organic – now usually found in most stores. If apples look perfectly shiny, beware; that's not how they look on the tree. The extra pennies you pay for nutrient-packed apples will save you dollars on your medical bills in the short and long run. Enjoy!

Bread Pizza Pocket – a recipe with endless possibilities!

 

When I made this week's Featured Recipe, Bread Pizza Pocket by Sheila , I realized this concept offers lots of recipe options.  You can put in leftovers, cooked ground beef, turkey, lamb and/or beans, cut veggies such as broccoli, carrots, corn, eggs, garlic, mushrooms, olives, onions, spinach, tomatoes and even some pineapple and blueberries.  Then add white dairy or non-dairy cheese of choice with a spread of tomato sauce to pull it all together. The Sandwich Maker is your ticket to success.  Other than lightly spraying the insides to avoid sticking, you do not add butter as you would when making grilled sandwiches.  The sealed edges insures that the moisture comes from the inside fillers for a super delicious and easy to make pocket. We even think you can use tortillas instead of bread, and they can be gluten-free.  Basically, using the pocket idea with the sandwich maker opens another way to serve your kids fun to eat healthier meals. Try it!

Performance Food: Eggplant fuels your Brain, Heart and more!

This funny shaped shiny deep purple eggplant is full of nutrients that feed your Brain, Heart, Nose (olfactory gland) and Skin!  It took living in Istanbul to wake me up to how delicious eggplant is  – now it's a favorite.  Not too long ago, we braved having some Kid Kritics taste test an Eggplant Parmesan recipe*.  We even left the skin on the slices. Boy, did they love it!  Did they know what they were eating?  No.  We had to describe this vegetable to them.  Trick to cooking eggplant: after slicing it, sprinkle some salt on each side and let it sit for a few minutes.  Then rub off the salt and proceed with recipe.  This takes out any bitter flavors. Then smother it with olive oil, herbs and spices, tomato sauce and some dairy or non-dairy cheese.  Mmm Mmm Good. Try it!
