Welcome to Our Blog

Have you seen the latest ad about sugar?

(Not the one I am referring to… don't you think this is dumb?)

It frosts me when ads give you misinformation in order to sell, sell, sell.  Be smarter than they think you are.  Follow your gut instinct rather than be misled.  The most recent ad that makes my hair stand on end is about sugar and high fructose corn syrup.  What research has shown is that processed corn syrup, high fructose corn syrup, impacts the body differently than plain sugar cane. The results are linked to diseases.  They lead you to believe this is not so – its okay to eat high fructose corn syrup.  Not.  One thing they do say that is right is "Sugar is sugar."  True.  However, the sugar's origin and how it is processed impacts the molecular structures which determines the impact it has on your body when you eat it. We say stay away from high fructose corn syrup and when you need a sweetener, use sugar cane. Also, please less is better.

Performance Food of the Week. Corn

If you want to feed your brain, blood, eyes, hair, nerves, and nose (sense of smell), eat some yellow corn.  It is said that blue corn feeds your nails!  More good news.  Corn is number two in the "Cleanest Crops."  Therefore you can feel comfortable buying, serving and eating conventionally grown corn.  It is good as both fresh and frozen.  I would avoid canned.  Corn on the cob is brilliant when grilled.  Cornbread with some kernels tossed in along with some dried cranberries is super delicious  – makes a great side dish for the holidays.  Throw some in your casseroles, tacos, and soups.  Corn is a sweet add-on to many dishes.  And, it tends to be on the lower end of produce prices.  Don't forget to ask your store managers about upcoming sales.

Chef Carlino’s advice for Healthy School Lunch Programs

Chef Carlino serves school lunches. He know kids like healthier food.  He also knows the obstacles for turning junk lunches into better ones.  How do you start the process? Keep this in mind, "Real food does not need masking." 1. Don't attack the whole situation. Work on one change at a time. 2. First recommended change: add a salad bar.  3. Parents, get involved.  Become volunteers helping in the kitchen and lunch room.  This is just the guts of what Chef Carlino shared with us on this interview.  He said so much more!  Listen on www.iTunes.com, then Podcast then "Better Food Choices". Then email me as we are working on a plan to help you. (ellen@KidKritics.com). Many hands make a happening!  Look forward to hearing from you.

Recipe: Wild Blueberry Applesauce – even I can make it!

From scratch sounds like a lot of work, but its not in this case.  Never thought I could make applesauce without making a royal mess of it. This recipe proved me wrong.  It is so easy, super delicious and loaded with antioxidants and other important nutrients.  4 ingredients: apples (organic please) , wild blueberry juice, lemon juice and cinnamon.  That's it.  All you do is cook apples in the wild blueberry juice then puree them. I used the "can't live without" Immersible Blender right in the pot.  Added lemon juice and cinnamon.  All done!  (Please go to www.KidKritics.com for details.) You can use any 100% juice – please avoid those with added sugar.  If I had known this was so easy, I would have made this years ago. Make some in quantity and freeze it for future use.  Save money with this kid favorite.

Performance Food of the Week. Kale

Kale is loaded with nutrients that feed your blood, bones, ears, eyes, hair, heart, lungs, muscles, nails, nerves, skin and teeth.  Most turn away from this curly coarse leafy green not having a clue that it can be so easy to cook for taste appeal.  All you do is cut away the center vein, chop it up finely and stir- fry in garlic sauteed in olive oil.  Spruce it up with a little sea salt and lemon juice.  Here's the key.  Serve just a small spoonful at first.  Never overwhelm new tasters with full servings. Add leftover little bits in casseroles, meat loafs, soups, and an omelette.  Cook up a bunch and freeze some for later use.  This is one inexpensive way to power up your family with antioxidants, anti-inflammatory, detox and anti-cancer properties. Go buy some this week. You are going to be pleasantly surprised.

Pizza a Veggie? Time for Action.

We usually stay away from politics but now it is time for action. Did you know school systems identify pizza as a vegetable?  No wonder they serve it so often. The government says since tomato sauce is an ingredient in pizza, a serving of pizza can be counted as a vegetable serving. Did anybody in D.C. ever learn that a tomato is a member of the fruit family. This scientific truth has been smeared when tomatoes began to be treated as vegetables.  But they are not.  We are glad kids eat tomato sauce.  But, to label "pizza" as a member of the vegetable food group is just plain absurd.  We encourage you to speak up by emailing, texting or calling your Congress representative or using the services at the Center for Science in the Public Interest (www.cspinet.org) to express your views.  Thank you.
