Moms, Deirdre and Vickie, say Take Five in 2012.  These are daily New Year's Resolutions you can keep.  1.  Take 5 minutes for yourself to be still. 2. Recipe. Apple Crumb Coffee Cake

Healthy Recipe Mom Karen, mom of 2 says,"These are really good and moist!"  Try this recipe during the holidays or for your next party.  It will be a hit with kids and adults alike.  Karen and her friend Tina brought this "super yummy" coffee cake to work.  The result?  "We have tested it amongst the office staff and got a unanimous thumbs up." Pine Nuts. Performance Food of the Week

There are enough nutrients in pine nuts to feed your brain, blood, hair, nails, and nerves.  So when you are overdosing on pesto sauce, as I do, you are doing yourself a favor.  Actually, everything in pesto sauce fuels your brain and so much more.  Pine nuts are a bit  pricey as they are so difficult to harvest.  We add just a few to our salads to enrich them.  They are also delicious in egg salad when mixed with some Parmesan cheese.  Pine nuts are one of those foods where you can enjoy just a little and get a lot of bang for your buck.  Look for the best buy, maybe that will be in the bulk section, and keep them in your freezer.

School Lunch Trailblazing Flop

According to a weekend report by the Los Angeles Times, the city's "trailblazing introduction of healthful school lunches has been a flop." In response to the public hectoring and financial inducement of Mrs. Obama's federally subsidized anti-obesity campaign, the district dropped chicken nuggets, corn dogs and flavored milk from the menu for "beef jambalaya, vegetable curry, pad Thai, lentil and brown rice cutlets, and quinoa and black-eyed pea salads."

Per Ms. Malkin, "Sounds delectable in theory. But in practice, the initiative has been what L.A. Unified's food services director Dennis Barrett plainly concludes is a 'disaster.' While the Obama administration has showered the nation's second-largest school district with nutrition awards, thousands of students voted with their upset tummies and abandoned the program. A forbidden-food black market — stoked not just by students, but also by teachers — is now thriving. Moreover, "(p)rincipals report massive waste, with unopened milk cartons and uneaten entrees being thrown away."

Who in the heck thought of  brown rice and lentil cutlets?  To quote a chef friend, "I would have thrown these away."   Really, where is common sense when you need it.  The Good News is that we are working on a public school lunch solution.  The Bad News, it is going to take a long time to wade through all the issues and create a workable healthier school lunch program.  In the meantime, send us your ideas!

Recipe. Kim’s Roast Turkey

Salmon. Performance Food of the Week

Salmon is pretty much an all body food. It's nutrients feed your brain, blood, bones, ears, eyes, hair, heart, lungs, mouth/teeth, muscles, nails, nerves, nose and skin. However, please stay away from farmed salmon.  Seek out wild cold water salmon.  Buy it fresh or canned.  Because it is so potent, every little bit amounts to a lot of benefits.  Coat with a little lemon juice and olive oil then grill, bake or broil it.  Serve with sauteed onions and garlic.  Simple and super delicious.  Treat canned salmon like tuna.  Make a salmon salad or salmon cake.  Add some to a pasta or rice dish.  You will also find frozen wild salmon patties in warehouse stores for good prices. You get the most for your money with this wild fish.  Try to offer it to your family once a week.

Follow Maine’s 5-2-1-0 Formula – it works!

The folks in Portland, Maine have encouraged their community to follow the 5-2-1-0 program: EVERYDAY eat at least 5 servings of fruits and vegetables, engage in 2 hours or less of screen time, exercise at least 1 hour, and, consume 0 sugary drinks. A recent survey showed a significant increased dedication to this behavior pattern.  More kids are sitting down and eating fruits and vegetables which means parents are serving them.  45% of kids are watching less screen entertainment.  Water is replacing sodas.  The trend is moving in a healthy direction.  This 5-2-1-0 number series seems to make it easier for parents and children to follow this guideline.  Do you agree?  If so, we encourage you to adopt it in your home.
