Grocery List. Gluten Free Cornbread and Muffin Mix

Cornbread provides a tasty alternative to other wheat and gluten free mixes.  Rich with flavor, this mix is fast and easy to use to make plain cornbread, muffins and even quiche or tart crusts.  I plan to make a spinach, turkey bacon and cheese quiche with this.  And, one day, I'll use it as a pie crust for blueberry filler!  As always, Pamela is careful with her ingredients sources.  This mix is made with organic degermed corn meal and flour – she goes the extra mile for you.  And you can taste the difference.  Always have a bag of this handy in your cupboard for quick side solutions for your dinners. It's a Kid Kritics favorite!

Onions. Performance Food of the Week

Onions are full of nutrients that feed your Brain, Blood, Bones, Eyes, Heart, Lungs, Mouth/Teeth, Muscles, Nails, and Skin.  They are packed with vitamins, minerals and antioxidants.  The average person eats about 20 pounds of a combination of red, yellow and white onions a year.  I am sure we eat more than that in our home.  That's because we add sauteed in olive oil onions (and garlic) to almost every dinner.  In addition to using them in meat, fish, eggs and vegetable recipes, we add the golden cooked ones as a topping to a grilled burger, chicken, lamb and fish entree, usually along with sweet potatoes and salad.  We recommend you do the same.  You will find your kids popping delicious lightly caramelized sauteed onions (and garlic buds) into their mouths.  What better way to build their immune systems and support their brain, bones and more.

Kid Kritics Cooks to Fuel Her Dreams

This girl made a recipe that fueled her muscles to help her become the best dancer, singer, actress, and teacher she can to be! (Yes, some kids have more than one dream.)   After she learned some facts about her over 600 muscles, she made a Grilled Cinnamon & Raisin Almond and Blueberry/Raspberry Jam Sandwich.  So simple.  All she did was spread some nut butter and berry jam on cinnamon and raisin bread, put it on a grill and closed the lid until it was done.  She was amazed at how yummy her their creation was that day.  Instantly she begged, "May I make another one?" 

The muscles foods in this recipe are almonds, blueberries, raspberries and whole wheat.  In addition, cinnamon, an anti-inflammatory, helps muscles before, during and after use.  When her mom came to pick her up, she brought her into show her what we had done. Sounds like they are going to make this recipe at home, with young helping hands!  Encourage your kids to make it, too.  In fact, asked them to make an extra for you!

Ask dr.heather: Can I give my child melatonin to help them sleep?

      This is a very good question that inspired me to write a post about sleep, the pineal gland and melatonin.

      Melatonin is released from the pineal gland when darkness is sensed by the retina of the eye. Melatonin will initiate sleep. Taking a store bought melatonin ( not natural – synthetic) has been very helpful for adults with jet leg and the occasional sleepless night. However, there is no long term research that would suggest this is a safe supplement to take regularly. Therefore with children, I would most definitely advise against the use of it unless you are working with a doctor and it seems to be the best treatment plan. Rarely will side effects be seen but there has been some note of them ( seizures, hyperactivity, nightmares, constipation) which need to be considered.

      My thoughts are to begin a night time routine that is supportive to our body’s natural rhythm.  Some of the following approaches can be very helpful in overcoming the night time stress of falling asleep.

      • Begin creating a night time routine about an hour before the desired bedtime. This would include no electronics ( tv, computer, video games).
      • Choose a relaxing cd ( I recommend Indigo Dreams by Stress Free kids) that will only be played before bed.
      • Have a snack ( tryptophan rich – see previous post) and a some sleep time tea ( chamomile). Avoid any stimulating foods ( caffeine, sugar or chocolate).
      • Take a warm bath or shower.
      • Do magic socks ( see video). We LOVE hydrotherapy in our family. It’s simple and effective.
      • Spray a lavender essential oil mixture ( or mix a few different oils)  on bedding.
      • Keep lighting low in room after bath.
      • Do some light reading then lights out. The cd maybe played at this time too.

      If none of this works, make an appointment with your son’s pediatrician and discuss his sleeping habits. They may have other suggestions or may direct you to a sleep expert.

      Anyone Stressed? Take a bath.

      Relax in that warm "sudsy" filled bath and feel your stress melt away. Feel comfortable taking a soothing bath at least once a week and especially when you are wired up so tight you feel like you could break or explode. Your kids also deserve this simple stress remover.  Offer them baths before bed, before a big test, after a big game or when they need relief from social pressures.  Add some bergamot or lavender oils for added relaxation benefits. I love baths. Since I was a kid, I have read many books while soaking. (Gone with the Wind took several baths to finish.)  We suggest you turn off the TV and computer, fill up your tub and enjoy a bath break.  Rest.

      Grocery List: Bunny Classic Buttery Rich Crackers, Organic

      This is soup and crackers season!  There are so many crackers out there containing unhealthy ingredients… the ones altered in food laboratories. And then there are those made with real food.  When you are going to have crackers which are really crunchy fillers usually lower in nutrients, pick the better ones.  The Kid Kritics went bonkers over Bunny Classic Buttery Rich Crackers (organic) by Annie's Homegrown. These are so good.  The operative word is 'buttery."  Since all the ingredients are organic, the source of buttery is a better for you.  And, boy, does this make the tasty difference.  These crackers are sensational plain, with soups, as cracker sandwiches using nut & seeds butters, hummus, meat and cheese fillers, as the base for toppings such as egg salad, tuna salad and cheese, and as dippers for spreads.  My mouth is watering just thinking about how good these taste.  Put any of these combinations in lunch boxes.  Serve them as snacks.  Why not for breakfast, too?  FYI: the sizes and shapes are perfect for kids. Put these on your grocery list!

      Recipe. Creamy Chicken Soup

      You may want to cream this soup or skip this step and eat the chicken chunks with sour cream stirred in it – like a stew.  Basically, all you do is saute onions and garlic in olive oil, water, and tamari sauce in a pot.  Then add chunks of chicken cooking them until done.  A combination of chicken broth, northern white beans, some cumin or curry, and parsley completes this pot of soup.  Placing an immersible mixer into the pot will make it creamy.  If you prefer to bite into the chicken chunks, then pass on the puree process.  Just before serving, stir in some sour cream, parsley flakes and salt to taste.  This is a hearty filling soup.  Serve small portions to kids with some crackers.  Add a salad on the side and you have a wonderful inexpensive lunch or dinner.  Recipe Details: http://www.kidkritics.com/recipes/Creamy-Chicken-Soup/209
