Healthy Recipe Mom Karen, mom of 2 says,"These are really good and moist!" Try this recipe during the holidays or for your next party. It will be a hit with kids and adults alike. Karen and her friend Tina brought this "super yummy" coffee cake to work. The result? "We have tested it amongst the office staff and got a unanimous thumbs up."
Oven to 350 degrees F
1 small and 1 large mixing bowl, 8x8 baking dish
10-15 minutes
25-30 minutes
16 two-inch squares
1/2 cup unsweetened applesauce (organic, if possible)
Preheat oven and lightly grease baking dish. Combine applesauce and brown sugar in a large bowl, add egg and beat until mixed.1/2 cup light brown sugar, packed
1 large egg (cage-free)
1 cup unbleached, unbromated flour (try spelt, whole grain, or gluten-free)
1/2 tsp ground cinnamon
1/2 tsp salt
1 tsp baking soda
In a smaller bowl combine flour, baking soda, salt & cinnamon. Gradually add dry ingredients to wet ingredients and beat until combined.1/2 cup plain Greek yogurt
1/2 tsp vanilla
1 1/4 cup Crispy Cinnamon Apple Chips (from Good Health Natural Foods)
Add yogurt and vanilla. Gently fold in apple pieces, pour mixture into baking dish.3 Tbsp light brown sugar
3 Tbsp unbleached flour
1 Tbsp butter, softened
Combine flour, brown sugar, and butter, in a small bowl to use as a topping. Using a fork, mix to create coarse crumbs. Sprinkle topping over the cake mixture. Bake until golden brown and set, approximately 25-30 minutes do not over-bake.
Use gluten-free baking mix instead of flour. Add 1 Tbsp gluten free cake enhancer to dry ingredients (natural, preservative free; Karen uses King Arthur brand). Karen sometimes uses Buttery Sweet Dough bakery emulsion (from King Arthur Flour) instead of vanilla. Sprinkle extra cinnamon on top!
