Sharp knife, meat mallet, mixing bowl, resealable bag and rolling pin or food precessor, baking dish, wooden skewers

3 to 6 people depending on ages

Instructions

  1. 3 boneless, skinless chicken breasts

    First "butterfly" each chicken breast, by cutting in horizontal direction down the middle. Then pound each one with a meat mallet to even thickness.
  2. 1/4 tsp sea salt

    Season chicken breasts to taste.
  3. 3 cups Veggie Stix by Good Health Natural Foods

    Add Veggie Stix to resealable bag, then with a rolling pin crush them into fine crumbs. You may also use food processor.
  4. 1/2 cup red bell pepper, diced

  5. 1 large red apple, diced

  6. 1 Tbs apple juice

  7. 1 Tbsp chicken or vegetable stock

  8. 2 stalks of celery chopped small

    Mix all ingredients except chicken together in large bowl to make the stuffing, using the apple juice and stock to moisten the mixture. Add extra if needed.
  9. 1 tsp extra virgin olive oil

    In baking dish, lay out chicken with the "butterfly" open and place about 1/3 of the stuffing mixture onto each chicken breast. Close "flaps" and press down to set the mixture. Use wodden skewers to prevent them from opening during cooking. Drizzle with olive oil and sprinkle any remaining stuffing over the top. Bake in 400 degree F oven for about 20 to 25 minutes or until chicken is cooked through. Remove skewers, slice and serve warm.

Options

Serve it with your favorite salad or vegetable side dish for a complete meal. You may also add some of your favorite herbs, spices, garlic, or onion for extra flavoring and nutrients!
