Oven to 350 degrees F
saucepan, casserole dish or individual baking dishes

8 oz elbow macaroni, whole grain
1 1/2 cups frozen mixed vegetables
Cook macaroni according to package directions or until it is al dente. Add mixed veggies for last 3 minutes of cooking. Drain.8 oz shredded cheddar cheese, reduced fat, white
12 oz Vermont-Style Cottage Cheese, by Cabot
8 oz sour cream, light
1/4 cup Parmesan cheese
1/8 tsp sea salt
1/4 tsp paprika
Stir in remaining ingredients. Add to casserole dish for family style or in individual baking dishes for children. Bake at 350 degrees until cheese is melted and dish is warm throughout. Serve warm!
Instead of mixed veggies, add grated broccoli florets when stirring in cheese. Add diced cooked chicken for a one-dish meal! Sprinkle with oregano for an Italian taste. For an optional topping, sprinkle with whole grain bread crumbs.
