Oven to 350 degrees F
Pie plate, small mixing bowl, food processor or resealable bag and rolling pin, cookie sheet

2 eggs (free range if possible)
Add to pie plate or shallow bowl2 lbs turkey breast, cut into strips
4 cups Veggie Stix by Good Health Natural Foods
Crush into crumbs in food processor or in resealable bag using a rolling pin. Add to a separate bowl. Take each turkey strip, coat it with egg and then roll it in the crushed Veggie Stix. Place on cookie sheet lined with parchment paper and bake about 30 minutes, then flip them over and cook for another 30 minutes or until it's crispy cooked through. Adjust baking time depending on the size of chicken strips.
Add 1 tsp parsley and paprika to crumb mixture or use your favorite herbs or spices to change the taste of the dish. Use chicken or fish instead of turkey, but be sure to adjust cook times.
