Large skillet, knife or pizza cutter
2 whole grain tortillasLay one tortilla flat on a plate. Save the other for the top.
2 Tbsp of cornIf using frozen, make sure it has been properly defrosted.
1/4 cup tomato, finely chopped
3 Tbsp of SoySation Shredded 3 Cheese Blend, by Lisanatti Foods
2 Tbsp organic black beans, canned or soaked & cookedSprinkle cheese, beans, corn and tomato evenly on tortilla. Top with other tortilla.
1 tsp extra virgin olive oilSpritz the skillet with extra virgin olive oil and add quesadilla. Heat on medium until light brown, flip to heat second side until light brown and cheese is melted. Slide onto plate and cut into wedges with pizza cutter or knife. Serve warm.
You can serve with fresh salsa, guacamole, and/or sour cream for dipping. Use spelt, gluten-free, or sprouted grain tortillas instead of whole wheat if you like. Add some fresh or dried cilantro - yumm!
