Bean dip is packed with protein and fiber - great for a snack or even packed in a lunchbox. The idea of a taco bean dip makes it more fun and kid-friendly. Add on any taco toppings that your family likes to make it your own!
Food processor
5-7 minutes
4-6, depending on ages
15 oz. can black beans, rinsed and drained
1/2 tsp minced raw garlic
2 Tbs. Greek-Style Yogurt, Plain, Lowfat by Cabot of Vermont
1 Tbs. extra virgin olive oil
1 Tbs. + 1 tsp. Organic Taco Seasoning Mix by Simply Organic
1/4 tsp. sea salt
2 Tbs. lemon or lime juice, freshly squeezed
Process in food processor until smooth. Serve with tortilla chips and veggies for dipping!
Use garbanzo beans instead of black beans. Sprinkle with grated cheese just before serving. Depending on how adventurous your children are you could also top with salsa, chopped tomatoes, chopped olives, chopped avocado or a dollop of Greek yogurt or sour cream. Replace raw garlic with 1/16 tsp garlic powder if you wish. For a milder garlic taste, use 1-3 cloves roasted garlic instead. For a stronger taco flavor, add more taco seasoning. Try adding 1 Tbs tahini - a paste made from sesame seeds. It is packed with nutrients, but it can add a slightly bitter taste so start with a little and add more if your family isn't used to it.
