You won't believe how good kale can taste, and kids will even eat it!!
One large and one medium bowl

1 bunch of kale
Wash kale and pat dry. Remove the entire stem on each by pulling the leaf away from the stem. Stack the leaves, roll up and cut into thin ribbons.1/2 tsp sea salt
Put kale in large bowl and sprinkle with sea salt. Massage salt into kale with your hands for 2 min or until kale has reduced in volume by about half. Discard any extra liquid at the bottom of the bowl. This is important because the extra liquid is bitter and you want to drain it before you add the rest of the ingredients.1/4 cup diced red onion
1/3 cup Wyman's Dried Wild Blueberries
1 small diced apple
1/3 cup toasted sunflower seeds
Stir into kale.1/4 cup olive oil
2 Tbsp apple cider vinegar
Toss with oil and vinegar.1/3 cup feta cheese
Taste for salt and vinegar, add more if necessary. Toss in cheese. Stir and enjoy!
This salad is very colorful and you can add more of your favorite ingredients such as dried cranberries, strawberries or orange slices. For a higher protein salad, add cooked beans such as garbanzo or white beans.
