Try these buffalo burgers kicked up with onion, herbs, spices, cheese. Buffalo is a great source of protein, B vitamins, iron, and zinc.
Burner to medium high
Frying pan, medium size, large bowl,
15 minutes
5-7 minutes
4, 4oz. burgers
1 lb. buffalo, ground, antibiotic-free
Break apart the meat in a large bowl.1 red onion, medium, minced
2 Tbs. rosemary, fresh, finely chopped (or 1 Tbs. dried rosemary)
1 tsp. turmeric, ground
1/2 tsp. cayenne pepper, ground
3 Tbs. Parmesan or Romano cheese, freshly grated
Mix ingredients into the buffalo meat. Shape into four patties.1 Tbs. olive oil
Place patties in pan and cook in olive oil over medium heat, turning once. Do not overcook, as buffalo does not contain the fat regular beef does.
Add slice of mozzarella cheese on top. Serve over salad greens or on a toasted spelt English muffin with mustard. Grill it! Add 1 tsp minced garlic and 1 tsp Worchestershire sauce.
Substitute 1 lb. ground beef, lean sirloin, antibiotic free in place of buffalo. Saute until beef is cooked through. Pour off extra fat.
