2 slices Country Morning White Bread, Rudi's Organic Bakery
Cut off crust and ensure both slices are the same size.1 Tbsp tomato sauce
1 slice mozzarella cheese
2 black olives, sliced
2 thin slices tomato
In the center of bread slice place cheese, black olives and tomato slices, then add tomato sauce on top, place the second slice of bread on top. Then seal the pocket with a fork or sandwich sealer. Dip the tip of the fork in water to help with a tighter seal, and make sure not to overfill your pocket. Place sandwich in skillet or sandwich press and toast both sides until golden brown.
You can add poultry, beans, or other veggies (spinach!) to your pizza pocket. If you are using peppers or onions make sure to sauté them first for a milder, kid-friendly taste. Sprinkle in some Italian seasoning or oregano for a flavor boost and extra nutrients! Use your family's favorite natural cheese in place of mozzarella.
