4 Turkey Sausage Patties (by Shelton's)
Place in toaster oven. Cook until crispy. Crumble into little bits. Put aside.4 slices 100% Whole Wheat Bread (by Rudi's Organic Bakery)
Spread on bottom of lightly greased baking dish. Sprinkle crumbled turkey sausage on top.4 eggs, large (free-range if possible)
1/4 cup mozzarella cheese, shredded
1 cup low-fat cow's milk, organic
1 tsp Worcestershire sauce or Bragg's Liquid Aminos
1 tsp mustard
1/2 tsp dried parsley
Whisk together in mixing bowl. Pour over bread and sausage.1/4 tsp paprika
Sprinkle on top. Bake until eggs are firm, about 20 minutes. Serve warm.
Replace turkey bacon with uncured turkey sausage or leftover cooked and diced chicken or turkey. Add cooked veggies. Replace cow's milk with unsweetened rice or almond milk. Replace mozzarella with your family's favorite cheese. Use 1 tsp fresh parsley instead of dried.
