Oven to 350 degrees
Muffin tin, 2 mixing bowls, whisk
15 minutes
15 to 20 minutes
12 large muffins
1 egg, cage-free
Beat egg1/4 cup olive oil
1/2 cup organic milk, reduced fat
1/4 cup honey
Add to egg and mix well.1 cup flour (try spelt!)
1/4 cup packed brown sugar
3 tsp baking powder
1 tsp sea salt
2 cups crushed Cinnamon Puffins cereal (Barbara's Bakery)
In large bowl combine all dry ingredients. Add wet ingredients to dry and stir just until flour is moist.1 medium apple, shredded
Add to mixture and fold in. Fill muffin tins 2/3 full with batter. Cook for 15 to 20 minutes or until toothpick inserted comes out clean.
Substitute another fresh or dried fruit for the apple. Stir in finely chopped walnuts. Sprinkle extra cinnamon on top of muffins!
