Ceramic or glass mug, pyrex container, or skillet
1-10 min, depending on cooking method
2 Tbs ground flaxseed
2 Tbs Pamela's Baking and Pancake Mix
1/2 tsp organic butter
Your choice of "mix-in" options - see below for ideas.Combine all ingredients in a mug, bowl, or Pyrex container. Cook 1 min in microwave or 10 min at 350 degrees F in toaster oven. Or pour batter into a skillet and cook pancake-style. Top with cinnamon or herbs. Serve with fresh fruit!
For a savory breakfast, try mixing in a dash of sea salt, shredded cheese and some leftover veggies before cooking. Sprinkle the top with herbs such as parsley or chives just before eating.
For a sweeter breakfast, mix in diced fruit, dried fruit, fresh or frozen berries, and/or chopped nuts. Top with cinnamon or nutmeg just before serving. You can even drizzle 1-2 tsp of pure maple syrup on top.
