Medium mixing bowl, whisk or wooden spoon, mini muffin tin

32 brownie bites
1 box Chocolate Brownie Mix, Gluten-Free, Pamela's Products
1/2 cup unsweetened applesauce (The NutritionBabes used Motts)
1 egg
1/4 cup water
In a medium bowl, mix together brownie mix, applesauce, egg and water.Non-stick cooking spray
Spray mini muffin tin with non-stick spray. Scoop 1 Tbs of batter into each mini muffin cup, about 3/4 full. Bake for 15 minutes or until toothpick inserted in brownie bite comes out clean. Do not over bake. Cool approximately 10 minutes before removing from pan.3/4 cup whipped topping, TruWhip
1 pint fresh raspberries
Spoon approximately 1 tsp of TruWhip onto each brownie. Garnish with fresh raspberries.
Use mini baking cups instead of cooking spray. Substitute another fresh fruit for the raspberries if you would like. Add a dash of nutmeg on top of the whipped topping.
