350 degrees F
8x8 baking dish, large saute pan, large saucepan, resealable plastic bag and rolling pin or food processor

1 to 1.25 lb ground turkey (suggested brands: Plainville or Shelton's)
1 package Organic Taco Seasoning Mix (suggested brand: Simply Organic)
Brown turkey in skillet, then add taco seasoning mix.1 and 1/2 cups elbow macaroni, whole grain or gluten free
Add pasta and about 4 cups of water to saucepan. Cook for 5-8 minutes, or until al dente. Drain and set aside.2 cups Mexican blend shredded cheese
4 oz reduced fat cream cheese
1 cup milk, skim or low fat
Add the cheese, cream cheese and milk to the turkey mixture and stir to combine. Add the pasta and stir until macaroni is well coated. Pour into 8x8 baking dish and bake uncovered for 15 minutes.1 cup lightly crushed Humbles Hummus Chips, Roasted Red Pepper (by Good Health Natural Foods)
Remove 8x8 baking dish from oven, sprinkle top with crushed hummus chips and return to oven for another 3-5 minutes or until golden brown.2 Tbsp Parmesan cheese
2 tsp paprika
Sprinkle Parmesan cheese and paprika on top and serve!
Crush Humbles with a rolling pin in a resealable plastic bag or use a food processor. Add cilantro or parsley for added green color and nutrients. Add about 1 cup chopped broccoli for a "one dish dinner." Or serve steamed broccoli or salad on the side. Try adding beans, diced bell peppers, or tomatoes to the dish!
