Chicken and Shrimp Pasta by Crystal     Print this Recipe

1 large skillet, 1 saucepan, colander

6-8 or more depending on ages

Instructions

  1. 1 Tbs. extra virgin olive oil

  2. 2 boneless, skinless chicken breasts, cubed (no antibiotics)

    Heat oil in large skillet over medium heat. Add chicken, stirring as needed for about 5 minutes or until cooked through. remove from skillet and drain on paper towels. Set aside.
  3. Water for pasta

    Heat to boiling.
  4. 1 (8 oz.) box VitaSpelt Organic White Spaghetti

    Add pasta to boiling water, cook according to package directions and drain in colander.
  5. 1 Tbs. extra virgin olive oil

  6. 1/2 cup shredded carrots

  7. 1 (10 oz.) bag frozen broccoli florets, thawed

  8. 2 garlic cloves chopped

    While pasta is cooking, in skillet over medium heat add oil, carrots, broccoli and garlic. Saute for 2 minutes.
  9. 1 (12 oz.) bag medium frozen shrimp, thawed

  10. 2/3 cup all natural chicken broth

  11. 1/2 cup Parmesan cheese, freshly grated plus extra for garnish

    Add broth, cheese and shrimp to skillet with vegetables. Add reserved cooked chicken.
  12. 1 Tbs. fresh basil, chopped plus extra for garnish

    Add drained pasta to mixture in skillet, stir and heat for about 30 seconds on medium. Stir in basil and serve immediately. Add a sprinkle of basil and cheese to each plate before serving.

Options

** Choose chicken broth without MSG and chicken raised without antibiotics!  Add in your family's favorite vegetables or whatever is in season.

  • 1 (12 oz. ) bag medium frozen shrimp
  • Chicken broth (No MSG, low sodium)
  • Parmesan cheese, grated
  • Fresh basil
