Crystal loves to use vegetables and herbs from her garden. “The children, ages 7 and 4, loved it because I added their favorite vegetables and shrimp, another family favorite. My husband suggested adding mushrooms next time. Feel free to try your family favorites!” (Crystal, mother of 2)
1 large skillet, 1 saucepan, colander
10 minutes
15 minutes
6-8 or more depending on ages
1 Tbs. extra virgin olive oil
2 boneless, skinless chicken breasts, cubed (no antibiotics)
Heat oil in large skillet over medium heat. Add chicken, stirring as needed for about 5 minutes or until cooked through. remove from skillet and drain on paper towels. Set aside.Water for pasta
Heat to boiling.1 (8 oz.) box VitaSpelt Organic White Spaghetti
Add pasta to boiling water, cook according to package directions and drain in colander.1 Tbs. extra virgin olive oil
1/2 cup shredded carrots
1 (10 oz.) bag frozen broccoli florets, thawed
2 garlic cloves chopped
While pasta is cooking, in skillet over medium heat add oil, carrots, broccoli and garlic. Saute for 2 minutes.1 (12 oz.) bag medium frozen shrimp, thawed
2/3 cup all natural chicken broth
1/2 cup Parmesan cheese, freshly grated plus extra for garnish
Add broth, cheese and shrimp to skillet with vegetables. Add reserved cooked chicken.1 Tbs. fresh basil, chopped plus extra for garnish
Add drained pasta to mixture in skillet, stir and heat for about 30 seconds on medium. Stir in basil and serve immediately. Add a sprinkle of basil and cheese to each plate before serving.
** Choose chicken broth without MSG and chicken raised without antibiotics! Add in your family's favorite vegetables or whatever is in season.
