Ice cream with just 3 ingredients? Yes, and it is decadent! Well, it's not really ice cream but it could fool a lot of people. A smooth, creamy consistency paired with the rich taste of peanut butter and cocoa!!! We love that it doesn't have any added sugar ... just what's in the banana. You could even serve this "ice cream" for breakfast. We're willing to bet that even self proclaimed banana-haters will like it!
Food processor
5 minutes plus time to freeze bananas
3 depending on ages
2 large or 3 small ripe bananas (best if starting to get some dark spots)
Slice into 1/2-inch slices and freeze - a few hours or overnight.2 Tbs creamy peanut butter, natural, creamy (such as Joseph's Lite or Once Again)
2 Tbs cocoa powder, unsweetened (not processed with alkali)
Add to food processor with frozen banana slices. Blend about 3 minutes or until reach a smooth consistency like ice cream. Scrape sides and bottom of food processor as needed. Serve immediately before it starts to melt!
NOTE - try to make just as much as needed. It's quick and easy to leave banana slices in the freezer and whip this up in a few minutes when you have the urge. If you freeze any leftovers it will be too hard to serve right away. But, leave it out on the counter for 20 minutes or so and it will taste good (but it won't have the same consistency as when it was first made).
Omit the PB or cocoa or both or add extra to suit your taste. Substitute almond, cashew, or sunflower butter for PB. Add a dash of cinnamon and/or nutmeg or use carob powder instead of cocoa. Pulse in a few mini chocolate chips for an extra treat. Top with shredded coconut or chopped nuts if you'd like. Top with crushed Chocolate Peanut Butter Cookies by Joseph's Lite. They are sugar free and the sweetener is all-naural, made from chicory root and does not have the laxative effect like maltitol in most foods.
