Large saucepan, mixing bowl, cutting board, saute pan

16 oz whole grain pasta
Place in boiling water and cook according to package directions until al dente. Drain and rinse pasta with cold water when done. Set aside.5 Tbsp extra virgin olive oil
Meanwhile, heat in the saute pan over medium heat.1 zucchini, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
2 garlic cloves, minced
Add the bell pepper, garlic and zucchini. Cook for about 5 minutes stirring frequently.1 jar marinara sauce, reduced sodium
2 pints of cherry tomatoes, quartered
3/4 cup fresh parsley leaves
Add the sauce, tomatoes and parsley to the saute pan. Cook for about 5 minutes. Lastly add the cooked pasta and reduce heat to simmer for about 5 minutes. Place on serving dish.1 cup Veggie chips (Suggested brands: Good Health Natural Foods or EatSmart Naturals)
Add to resealable plastic bag. Seal and crush with a rolling pin.3 Tbsp Parmesan cheese
Sprinkle the crushed Veggie Crisps and Parmesan cheese over the pasta. Serve immediately!
You can add any other vegetables you want! A great dish for using your leftovers, try it with carrots and broccoli. And for more complete meal add shrimp or chicken. Try replacing parsley with fresh basil.
