Oven to 350 degrees
Rolling pin, resealable plastic bag, glass dish, baking sheet
15 min, plus marinate overnight
15-20 min
4 or more depending on ages
1/2 cup Italian salad dressing (watch sodium, no artificial ingredients!)
1 tsp minced garlic
1 lb chicken breast tenderloins (no antibiotics!)
Combine ingredients in glass dish. Cover and allow to marinate overnight in the refrigerator.10 Oatmeal Cookies, Sugar-Free (Joseph's Lite)
Add to resealable bag and crush with rolling pin until very fine.1 Tbs parsley, finely chopped
1 tsp coarse sea salt
Mix crushed cookies with parsley and sea salt. Roll chicken tenders in cookie mixture. Add chicken tenders to baking sheet and bake 15-20 minutes, or until the juices run clear.
Use 1 tsp dried parsley if you do not have fresh. Bake chicken on parchment-lined baking sheet for easy clean-up. Add cayenne to cookie mixture for a little added spice!
