We love that the fresh berries are not cooked. What stands out is the extremely high phytonutrient, immune building rating of the blueberries. Choose wild blueberries for even more antioxidants. And this pie is very versatile, just change out the type of cookie or fruit. Be sure to watch portion sizes though! A little goes a long way for a sweet treat on a hot day.
375 degrees, Fahrenheit
Glass baking dish, saucepan, bowl
20 minutes
5-8 minutes
6-8 depending on ages
1/2 cup organic butter
Put into saucepan over low heat, stir while melting.2 cups cookie crumbs
Add to melted butter and mix thoroughly. Place in pie plate, press together to form crust, coating all sides. Place in oven 5-8 minutes or until lightly cooked. Cool.4 Tbs. arrowroot powder or 3 Tbs. cornstarch
3 Tbs. sugar cane crystals or apple juice concentrate
1/8 tsp. sea salt
1 cup water
Put into saucepan. Heat and stir until thickened.1 qt. blueberries, fresh
1 Tbs. organic butter or Earth Balance spread
Stir into saucepan mixture until butter is melted and berries are coated. Pour into pie crust.1 Tbs. lemon juice
Sprinkle over top of pie. Cool or chill. Serve.
You can use thawed and drained frozen blueberries or any fresh fruit of choice.
