Mixing bowls, baking dish

4-6 (or more depending on ages)
1 lb. lean ground turkey
1 egg
In mixing bowl, combine turkey with egg, mixing by hand.2 Tbs. ground flaxseed (keep in refrigerator or freezer)
1 small onion, grated
3 garlic cloves, minced
1 tsp Kosher salt
1 tsp dried basil
1 tsp paprika
1/4 cup grated Parmesan cheese
Add ingredients to turkey mixture in bowl, making it into a "dough". Shape meatballs into whatever size you desire, but remember that smaller ones cook faster.2 cups Veggie Stix, Good Health Natural Foods
Place in small plastic bag and crush them using your hands. Place crushed Veggie Stix in a bowl. Roll the turkey meatballs in the crushed Veggie Stix to coat. Place them on a baking dish and bake for 20-30 minutes, depending on size. Serve.
These are great as appetizers or served with marinara sauce over pasta. Sprinkle in chopped fresh parsley, basil or oregano for added color and nutrients. Make the meatballs bite sized and put on skewers with a cherry tomato halves and cheese cubes for a fun kebob. Or serve on a toothpick for a snack. Good suggestions for dipping sauce are your original marinara sauce, ranch sauce or a light alfredo sauce also goes well with it. Freeze any extras - they reheat quickly! Be sure to refrigerate or freeze any leftover flaxseed to help prevent them from going rancid.
