5 lbs peeled carrots
Vegetable brothCover carrots with vegetable broth and simmer until soft. Drain carrots reserving liquid.
Unsweetened almond milkPurée carrots in food processor adding enough milk to make carrots smooth.
1 Tbs curry powderStir in curry powder. Add mixture to a baking dish and bake @ 350 for 30 minutes. Serve warm.
Use organic half and half or unsweetened rice or almond milk in place of reserved broth when adding to the food processor. Winnie says this gives the dish a richer taste. Add more or less curry powder to your taste.
