4 to 6 depending on ages
1 cup of crushed EatSmart Naturals Veggie CrispsPlace about 2 cups of the whole EatSmart Naturals Veggie Crisps in a sealted plastic bag and using a rolling pin crush them into a coarse mixture. Place in a bowl.
1 tsp Paprika
1/3 cup of grated Parmesan cheese, fresh gratedAdd the crisps, paprika and cheese to a bowl and mix.
1 egg (free range if possible)Beat one egg in a separate bowl.
4 boneless, skinless chicken breast halvesPound chicken breasts to even thickness if needed. Coat each piece first with egg then the dry mixture.
2 Tbsp extra virgin olive oilPlace fully coated in baking dish coated with olive oil. Place it the oven for about 30 minutes or until juices run clear.
Use chicken breast tenders or slice breasts into strips to make it easier for kids to eat. Stir some parsley flakes into the dry mixture before coating to add extra nutrients. You can serve your chicken with brown rice and steamed vegetables for a balanced and yummy lunch or dinner.
