Burner, medium temperature, toaster oven or oven 350 degrees Fahrenheit
Medium skillet, whisk, mixing bowl, grater
About 5 minutes
3-5 minutes to scramble, 5 minutes in toaster oven
3-4, depending on ages
3 eggs (cage free if possible)
1 Tbs. cow's milk (organic if possible)
Beat together with whisk in mixing bowl.2 Tbs. mild salsa
1 Tbs. Parmesan or Romano cheese, freshly grated
Whisk into egg mixture. Pour entire mixture in lightly greased skillet. Scramble until cooked to your preference.4 whole grain tortillas, small to medium
1/2 tsp. dried parsley
Spread scrambled egg mixture along center of tortilla. Sprinkle each with parsley. Roll up and secure with toothpicks. Place in warm toaster oven for 5 minutes. Serve.
Replace cow’s milk with unsweetened rice or almond milk. Add fresh parsley or cilantro instead of dried. Use medium salsa or add a dash of cayenne for those who like spicier foods. Use shredded cheddar cheese.
