"My children ages are 12 and 9 and they both gave a big thumbs up on this recipe! As an aside my 9 yr old is on what her doctor calls the "unritalin diet" which means he is 90% gluten and dairy free. In addition he is also egg and citrus free diet so with this in mind I created this recipe but wanted everyone in the family to enjoy as well." Denneen, mother of 2.

4 to 6 people depending on ages

Instructions

  1. 2 lbs of chicken breasts (organic if possible)

  2. 1 cup of coconut milk **

    Cut chicken breasts into chunks or nuggets and place in large bowl. Pour 1 cup of coconut milk over top and let marinate for about 30 minutes in the refrigerator.
  3. 5-6 oz of Falafel Chips by Flamous Brands

    While chicken is marinating, grind up the falafel chips in a food processor to make about 3 cups.
  4. 1/2 cup unsweetened coconut flakes (organic if possible)

  5. 1/2 tsp sea salt (Suggested: Himalayan)

  6. 1/2 tsp ground pepper

    In a bowl mix ground falafel chips, coconut flakes, salt and pepper.
  7. 2 Tbsp unrefined coconut oil

    Grease baking sheet with coconut oil. Dip each chicken piece into dry mixture then place on baking sheet. Bake about 25 minutes or until cooked through. Place on serving dish.
  8. 2 Tbsp chopped cilantro

    Sprinkle with cilantro. Serve warm.

Options

Use strips of turkey instead of chicken.  Substitute a dash of cayenne pepper for the ground pepper.  For easy cleanup, place chicken on parchment lined baking sheet.  Serve with fresh seasonal fruit or salad for a light lunch, or with steamed carrots and broccoli for dinner.  These would be delicious in a pita with lettuce, tomato, and olives served with hummus or tzatziki!

 

** Watch out for preservatives and additives in canned coconut milk.  Seek out one with as few ingredients as possible or try blending your own from fresh, frozen, or dried coconut and water!
