More than just onions, this luscious array of onions, garlic, mushrooms, chicken or turkey, and seasonings will be a winner at your house.
Burner, medium
Cutting board, knife, large skillet
10 minutes
20 minutes
4-6, depending on ages
3 Tbs. olive oil
Place in skillet. Gently heat.2 Vidalia or sweet onions
Peel off skins. Chop into small pieces anyway you want. (Hint: To avoid tears, peel off skins and soak in ice water for 10 minutes before cutting onion.) Place in skillet and stir until coated with oil.6 garlic cloves, minced (about 2 Tbs)
Add to onions, stir.1 cup mushrooms of choice, fresh
Chop into small pieces. Add to onions and garlic. Stir.2lbs. chicken or turkey
Cut into small pieces. Add to skillet mix. Stir until cooked thoroughly. (Hint: Use leftover poultry and simply warm through.)1 Tbs. parsley flakes
1 Tbs. Italian Seasoning
Sea salt to taste
Stir herbs and seasonings into skillet mix. Gently cook for 10 minutes so flavors have time to work through all the ingredients. Serve.
Replace poultry with ground beef or fish. Add shredded carrots.
