Preheat oven to 325°. Place oven rack in the center of the oven. On a large baking sheet toast oats for 5 min, turn oats with a spatula, continue toasting 5 more min. Then add the coconut to the pan, mix with the oats and toast another 5 to 8 min.1 1/2 cups Honey Bunny O's Cereal, by Annie's Homegrown
1 cup dried mixed fruit
1/4 cup chopped prunes (or dates)
2 Tbsp golden flax meal
In large bowl mix together the cereal, dried fruits, prunes, and the flax meal. Add the flax meal directly onto the top of the fruit to help keep the flax from sinking to the bottom of the mixture. Mix well. Then add the toasted oats & coconut to the fruit, cereal & flax mixture and mix well.
Try adding 1/2 cup of your favorite nuts or seeds. Add cinnamon or pumpkin pie spice. Use coconut oil instead of butter.
