Oven to 350 degrees F
Large mixing bowl, whisk, 8 inch cake pan

8 or more depending on ages
1 box of Golden Vanilla Cake Mix, Gluten-Free, Simply Organic
2 eggs
2 Tbs light olive oil
3/4 tsp vanilla
1/2 cup unsweetened applesauce (NutritionBabes used Mott's Natural Applesauce)
Add to a large mixing bowl. Mix until well combined.Non-stick cooking spray
Spray an 8 inch cake pan with non-stick spray. Pour batter in pan and bake in oven for 20-25 minutes or until a toothpick inserted in the center of cake comes out clean. Allow cake to cool at least one hour and then gently transfer to serving plate.3/4 cup TruWhip whipped topping
Cover top of cake with TruWhip topping.1 kiwi fruit, sliced
1/2 cup fresh raspberries
1/2 cup fresh blueberries
1 cup fresh strawberries, sliced
Decorate top of cake with fruit. Have fun being creative. Better yet, ask you kids to decorate it. Serve! The cake can be made the night before serving and kept in the refrigerator.
Use your family's favorite fruits on this cake or whatever fresh or dried fruits you have on hand! Thawed frozen fruits can also be used - strain them first.
