Preheat grill to medium heat
One medium and one large mixing bowl, grill, 2 medium saute pans, lid, colander, food processor, cookie sheet, 8 skewers
About 30 minutes
About 6-8 minutes for quinoa, about 10 minutes for kebabs
8, depending on ages
8 wooden kebab skewers
Soak for at least 30 minutes in cold water.1 tsp. extra virgin olive oil
8 oz. mushrooms, rinsed and drained well
Heat olive oil in pan and saute mushrooms until tender. Drain mushrooms in colander over sink and allow to cool. Dice mushrooms or pulse in food processor and set aside.1 cup water
1/2 cup quinoa
While mushrooms are sauteing, bring water to a boil in second saucepan. Rinse quinoa. Then add to boiling water and bring back to a boil, cover, cook over medium heat for approximately 6-8 minutes or until all water is absorbed. Remove from heat, fluff, cover and let stand for 10 minutes.1 Tbs. organic enchilada sauce mix (Simply Organic)
1 lb. ground turkey (Plainville Farms 94% lean)
In large bowl, add turkey, sauce mix, mushrooms and quinoa and mix until combined well. Roll meat into 8 balls and place one on each skewer. Place skewers on a cookie sheet. Flatten each ball into an oval shaped thick patty. Place kebabs in refrigerator for at least 30 minutes or overnight. Preheat grill to medium heat and lightly oil grate. Grill kebabs on each side approximately 5 minutes or until cooked through. Serve.
"Pile the Ground Turkey Kebabs on grilled pita with sliced tomato and tzatziki-cucumber dip. Serve on the side, cut-up veggies with artichoke dip. Delicious!"
