Oven to 375 degrees F
Large skillet, glass baking dish, cutting board & knife

3 onions, minced
3 different colored bell peppers, washed, minced (organic, if possible)
1 cup mushrooms, finely chopped
2 Tablespoons 100% olive oil, extra virgin
Combine in skillet over medium heat. Saute until vegetables are slightly tender.1 pound ground beef, lean
Add to vegetables and cook, stirring, until meat is almost cooked through.1/2 cup white cheddar cheese, low-fat, cubed or grated
1 (14.5 oz) can tomato soup, low-sodium (nothing artificial)
Add cheese and soup to the vegetable/meat mixture. Stir until well blended. Pour into a large baking dish that has been sprayed with non-stick cooking spray. Place in oven and bake for 35 minutes.Tostada Shells
Heat or toast according to package directions. Serve warm topped with the beef and vegetable mixture.
Replace ground beef with ground chicken or turkey. Replace tomato soup with salsa. Add cumin, chili powder, or cilantro before baking for extra flavor and nutrients. Serve with guacamole, salsa, or sour cream on the side.
