Oven to 350 degrees F
2 large mixing bowls, muffin pan, flour sifter
20 minutes
20-25 minutes
12 regular sized muffins
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/3 cup wheat germ
2 tsp baking soda
1/4 tsp sea salt
In large bowl, sift together both flours. Add wheat germ, baking soda and salt. Mix well.1/2 cup chopped walnuts and/or pecans
1/4 cup brown sugar
Add the nuts and sugar to the flour mix, blend well.1/4 cup Organic Raw Honey by Wholesome Sweeteners
1 egg
1/3 cup organic canola oil or coconut oil
1/4 cup unsweetened almond milk
1 cup mashed bananas
In large bowl mix all wet ingredients (milk, banana, canola oil and egg), then add to the flour mixture and blend well. Fill muffin cups about 2/3 full and bake for 20-25 minutes. Muffins are done when a toothpick inserted in the center comes out clean.
You can add 1 tsp of cinnamon as an option, it will add some color and flavor to this already great recipe. If you'd like, replace almond milk with cow's milk (organic, if possible). Try making mini-muffins. They are the perfect size to add to you child's lunchbox! This recipe will make about 40 mini muffins, but be sure to decrease baking time to 10-12 minutes.
