"Organic Raw Honey by Wholesome Sweeteners was perfect for baking. It's got a great texture and the open-mouth jar makes it convenient for baking, as it can be easily scooped out with a measuring cup." by Emily, mom of 2.

Instructions

  1. 3/4 cup whole wheat flour

  2. 3/4 cup all-purpose flour

  3. 1/3 cup wheat germ

  4. 2 tsp baking soda

  5. 1/4 tsp sea salt

  12. 1 cup mashed bananas

In large bowl mix all wet ingredients (milk, banana, canola oil and egg), then add to the flour mixture and blend well. Fill muffin cups about 2/3 full and bake for 20-25 minutes. Muffins are done when a toothpick inserted in the center comes out clean.

Options

You can add 1 tsp of cinnamon as an option, it will add some color and flavor to this already great recipe.  If you'd like, replace almond milk with cow's milk (organic, if possible).  Try making mini-muffins.  They are the perfect size to add to you child's lunchbox!  This recipe will make about 40 mini muffins, but be sure to decrease baking time to 10-12 minutes.
