Preheat

350 degrees Fahrenheit

Equipment

Baking pan or cupcake pan, medium mixing bowl, cutting board

Prep Time

5 minutes

Cook Time

15-20 minutes

Number of Servings

4-6 or more, depending on ages

Instructions

  1. 2 Tbs. organic ketchup or tomato sauce

  2. 2 Tbs. organic baby rice cereal, wheat germ or rolled oats

  3. 2 Tbs. water

    Stir together in medium bowl.
  4. 3/4 lb. ground round or sirloin (no hormones or antibiotics)

    Add to bowl and mix well.
  5. 1/4 cup frozen or fresh sweet peas

  6. 3 baby carrots

  7. 1 slice onion (about 2 Tbs.)

  8. 1 slice tomato cut from center and peeled

    Chop finely. Place in bowl with meat mixture and "mush" together. Roll into small balls- or use a cookie scoop to scoop out meatballs. Place on baking sheet. Bake for 15-20 minutes, depending on size of meatballs. Pour off excess liquid while baking, as needed. Serve plain, or, offer ketchup or tomato sauce for dipping. Or serve with pasta, sauce and a green salad!

Options

OPTIONS: Add herbs of your choice to meat mixture before cooking.  Replace beef with ground turkey or chicken.  Add an egg in place of water.
