A tasty, low carb alternative to mashed potatoes. Use as is, topped with gravy or sauce, or even in shepherd's pie!
Saucepan, lid,immersion blender or food processor

1 head cauliflower
1 cup onion, coarsely chopped
2 garlic cloves, halved
1 cup water
Add to saucepan. Cover. Bring to boil. Reduce heat and bring to simmer 10-15 minutes or until cauiliflower is tender. Drain water very well. (For a mash that holds it's shape, blot gently with paper towels.2 Tbs. butter (organic if possible)
1/4 cup Romano cheese, grated
Sea salt to taste
Add to cauliflower mixture. Use an immersion blender to puree. If needed, add 1-2 Tbs. milk or chicken broth.1 tsp. parsley or chives, chopped
Garnish each serving and serve warm.
Use frozen cauliflower instead of fresh. No immersion blender? Use a food processor. An electric mixer also works, but the texture will be chunkier. After cooking, add 3-4 cloves roasted garlic or for a stronger garlic taste, 1/2 tsp. minced raw garlic. Replace Romano cheese with Parmesan, cream cheese, sour cream, or 1/2 cup shredded cheddar. Or omit the cheese. Here's a serving suggestion: spread in the bottom of a glass baking dish; top with ground turkey, tomato sauce, and mozzarella cheese; bake to melt the cheese.
