1 lb ground turkey (Plainville Farms)
1 yellow onion, chopped
2 cloves garlic, chopped
Add to stockpot and cook, stirring, until turkey is browned.1 (32 oz) box chicken broth
Add to pot and bring to a boil. Reduce heat to low or until simmering.1 Tbsp chili powder (more or less to taste)
1 red bell pepper, chopped
1 large (28 oz) carton/box chopped tomatoes **
1 small (4 oz) can of mild green chilies
1 can (6 oz) can tomato paste
Stir into mixture in pot and allow to simmer 30 minutes.1 bag Organic Falafel Chips, Original - 1 handful per bowl (Flamous Brands)
1 cup shredded cheese (white)
Add chips to bottom of each bowl and spoon chili over the top of the chips. Top each bowl with a sprinkle (about 2 Tablespoons) of shredded cheese. Serve warm with extra Falafel Chips for dipping.
Saute onion, garlic, and ground turkey in 1 Tbsp of olive oil if you’d like. Add 1/2 tsp dried (1/2 Tbsp fresh) cilantro, parsley, and/or basil and a drizzle of olive oil or flaxseed oil.
** Most brands of canned tomatoes use BPA-based linings in the cans. BPA is a chemical that acts as a hormone disruptor and may increase risk of certain diseases and neurological disorders. We suggest boxes/cartons of tomatoes or seeking out BPA-free brands in cans or glass containers. Of course you could always use fresh chopped tomatoes instead!
