These no bake cookies are so simple to make and the recipe uses honey instead of highly processed sugar.  Bonus - it doesn’t require use of the oven!  Kids will love to help make them.

Instructions

  1. 1/2 cup butter (Suggested brand: Cabot Creamery)

  2. 3/4 cup honey, organic (Suggested brand: Wholesome Sweeteners)

  3. 1 tsp sea salt

  4. 1/4 cup cocoa powder (not processed with alkali)

  5. 1/8 tsp baking soda

  6. 2 tsp vanilla extract

    In medium saucepan, mix together first 6 ingredients and bring to a boil. Boil for 1 minute while stirring. Then remove from heat.
  7. 1/2 cup Almond Butter (Once Again)

  8. 3 1/2 cups rolled oats

    Add almond butter and stir to melt. Then add in oats and stir to combine. Drop by teaspoonfuls onto cookie sheets lined with wax paper or parchment. Chill until firm. Store any leftovers in an air-tight container in the refrigerator.

Options

Once cooled enough to handle use damp hands to roll them into balls or mold into shapes.  Decorate as desired.  For Halloween: spiderwebs, eyeballs, and ghosts can be made with Greek yogurt or frosting and a few mini chocolate chips or raisins!  Use different nut or seed butters for variation.   Add dried fruits, chopped nuts, coconut, or dark chocolate chips.  Add cinnamon.  This recipe can easily be made gluten-free by using gluten-free brands of baking soda, vanilla extract, and oats.
