375 degrees F
Blender, small saucepan, pie pan
20 minutes
7 to 10 minutes
6 to 10 people depending on ages
2 cups of O-shaped oat cereal, honey flavored
6 Tbsp melted butter (Cabot Creamery)
1/3 cup brown sugar
For the crust: place cereal in a platic bad and with rolling pin crush it until coarsely ground. You may use a food processor if available. Add melted butter and sugar to cereal and combine. Press it into pie pan and bake for about 7 minutes in oven at 375 degrees. Allow it to cool, set aside while you prepare the filing.8 oz of frozen unsweetened peaches, thawed (organic if possible)
Place in blender and puree until smooth.1 packet unflavored gelatin
Dissolve the packet in one cup of boiling water, stir until gelatin is completely dissolved, this may take several minutes.1 cup low fat vanilla yogurt (organic if posisble)
1/2 tsp nutmeg
Add vanilla yogurt and nutmeg to peach puree, then add dissolved gelatin. Stir all ingredients for smooth mixture. Fill pie crust and place in refrigerator until filling is set, usually up to 30 minutes.
Substitute about 5 fresh peaches, sliced, for frozen. You may want to add some fresh peach slices to the top as decoration.
