The key to this pinwheel is the peanut butter spread! What you can not see, nor can you kids, are the sparsely sprinkled parsley and paprika flakes. Both herbs are potent sources for Vit. A and potassium. They don’t add taste and they add the antioxidant colors, green and red. Peanut butter and chicken are great together. The Asian culture knows this very well.  Of course we added romaine lettuce to this pinwheel. It has more nutrients than iceberg and is usually fine with kids. Yes, we included the crunchy spine. It still rolled up with ease. Great in a lunchbox!

Instructions

  1. 2 Tbsp natural creamy peanut butter

  2. 2 Tbsp coconut milk, unsweetened **

  3. 2 tsp extra virgin olive oil

  4. 1/4 tsp Bragg’s Aminos or low-sodium tamari sauce

  5. 2 tsp lemon juice

  6. 1/8 tsp minced garlic, or less if desired

    Place in food processor. Blend until creamy.
  7. 1 Tortilla (whole grain, sprouted grain, or gluten-free)

  8. 2 Tbsp peanut butter spread (recipe above)

    Coat tortilla with peanut butter spread.
  9. 2 slices chicken breast, plain roasted (additive-free)

  10. Parsley flakes

  11. Paprika

    Place chicken on top of spread, leaving about 1 inch of tortilla exposed at top. Sprinkle lightly with parsley and paprika.
  12. 1 leaf romaine lettuce

    Place on top of chicken breast. Roll up tightly away from you and slice into 3/4 inch pinwheels. Hold together with toothpicks or cupcake picks if desired. Serve.

Options

Make extra peanut butter spread and refrigerate or freeze for later.  This spread is also a great dip for pretzels and celery!   Try with turkey slices or leftover cooked chicken.  Some kids want their pinwheels sliced into cross-sections giving them pop-it in their mouth appeal. Some want it to remain a whole roll that they can pick it up and devour it from end to end. Either way, it is fun finger food!

 

** Watch out for preservatives and additives in canned coconut milk.  Seek out one with as few ingredients as possible or try blending your own from fresh, frozen, or dried coconut and water!
