Your kids will gobble up this protein- and fiber-rich dip.  It tastes like pizza!  Just throw the ingredients in a food processor ... so simple and delicious!!  For Halloween, make a Jack-'o-lantern face with black olives.

Instructions

  1. 1 1/2 cups cooked garbanzo beans (or 15 oz can), rinsed and drained

  2. 3 Tbs. extra virgin olive oil

  3. 2 Tbs. tomato paste

  4. 1/2 tsp. garlic, fresh, minced

  5. 2 tsp. lemon juice

  6. 3 Tbs. Romano cheese, freshly grated

  7. 1/3 cup water

  8. 1/2 tsp. oregano, dried

  9. 1/2 tsp. basil, dried

  10. 1/4 tsp. sea salt **

    Add all to a food processor and blend, scraping down sides and bottom occasionally. Blend about 5 minutes or until smooth. Add more water 1 Tbs at a time to reach desired consistency. For best flavor refrigerate a few hours or overnight before serving. Serve with veggies and whole grain crackers for dipping!

Options

Serve warm topped with a bit of mozzarella cheese.  Drizzle olive oil on top of hummus before serving.  Use hummus instead of sauce for pizza.  No tomato paste?  Substitute 1/3 cup spaghetti sauce and omit tomato paste and water.  Dairy-free?  Use nutritional yeast instead of Romano cheese. Use 1 1/2 tsp. each fresh basil and oregano instead of dried.  

 

** Note: add sea salt to taste.  If you cook your own garbanzo beans or use low sodium then you may need to add a bit more salt than if you use regular canned beans.  Start with less ... you can always add more!  Choose BPA-free cans if possible!
