Breads take time to bake so bake it ahead of time. Freeze it if necessary, until you are ready to serve it. On cold winter afternoons, kids like to sink their teeth into something warm that fills their tummies!
FYI: For kids who won't vegetables or nuts, this is a way to sneak some into their bodies. There is a fair amount of sugar in this bread so watch portion sizes!
350 degrees Fahrenheit
Bread or loaf baking pan, mixing bowl, large. whisk
15 -20 minutes
About 1 hour
6 or more, depending on ages
2 cups flour, whole spelt or whole wheat
1 1/2 cups flour, unbleached
1 tsp. ground cinnamon
1 Tbs. baking soda
Combine and mix together in a large bowl.1 cup walnuts, finely chopped, raw
Add to flour mixture. Stir throughout.4 eggs, large (free-range)
1 cup sugar cane crystals
2 cups pumpkin puree, cooked or canned (no sugar added)
3/4 cup organic canola oil or coconut oil
2/3 cup water
Combine in large bowl. Beat together thoroughly. Gradually add flour mixture to egg mixture. Slowly stir until completely mixed together. Pour into nonstick-sprayed (1 second) bread pan. Place in heated oven and bake until it passes the dry toothpick test, about one hour.
Add 1 tsp. sea salt. Replace sugar with 1/2 cup 100% applesauce. Add 1/2 cup semi-sweet chocolate or carob chips. Make into muffins!
