Quick No-Yeast Cinnamon Rolls by Marni     Print this Recipe

Preheat

Preheat oven to 375 degrees F

2 round cake pans, mixing bowl, measuring cups, pastry blender

Instructions

  1. 3 cups whole wheat pastry flour

  2. 1/4 tsp salt

  3. 4 tsp baking powder

    Sift flour, salt and baking powder together into a bowl.
  4. 1/4 c + 2 tsp unsalted butter or organic shortening (Anna uses Spectrum brand)

    Add butter or organic shortening to bowl. Use pastry blender, fork or your fingers to combine into a crumbly texture.
  5. 1 cup milk, low fat (organic if possible)

    Pour in milk and stir just to combine. Put onto lightly floured surface and knead for 1-2 minutes. Roll out into rectangle.
  6. Wholesome Sweeteners Organic Cinnamon Flavored Agave Syrup

    Pour a thin layer of cinnamon flavored agave onto the rectangle of dough.
  7. 1/3 cup chopped pecans or walnuts

  8. 1 tsp cinnamon

  9. 1/4 cup raisins

  10. 1/3 cup unsweetened shredded coconut

  11. 1/3 cup chopped apple

    Sprinkle with chopped nuts, cinnamon, and either coconut, raisins, or chopped apples ... or all 3! Roll up like a jelly roll and pinch ends closed. Cut into 1" slices and lay into a round cake pan with swirl showing and edges touching. Bake in preheated oven for 20-25 minutes.

Options

To make these gluten free, substitute Pamela's Baking & Pancake mix for the flour and add only 1 tsp baking powder.  Use coconut oil instead of organic shortening or butter.  For special occasions you may want an additional topping.  Here are some ideas from Healthy Recipe Mom, Anna:  As soon as you take rolls out of the oven, top with a drizzle of Wholesome Sweeteners Organic Cinnamon Flavored Agave Syrup and spread it around to your liking.  Or make a bit of frosting glaze by combining Wholesome Sweeteners Organic Powdered Sugar and milk to your desired consistency and drizzle over cinnamon rolls.

 

Note that the organic shortening in this recipe is made from expeller pressed palm oil and is not hydrogenated.  Please do not substitute with harmful hydrogenated trans fats!
