Instructions

  1. 1 1/2 cups all-purpose flour (unbleached, unbromated)

  2. 2 Tbsp Almond Butter with Omega-3, Creamy (by Once Again), chilled

  3. 3 Tbsp organic butter, chilled

  4. 3-4 Tbsp ice water

    Cut the almond butter and butter into the flour. Then slowly add the water as you mix until it forms a dough. Roll out on a lightly floured surface and place in a tart pan. Bake at 400 degrees F for 20-30 minutes, until golden. If you want a softer crust, bake for 5-10 minutes less. Cool on rack.
  5. 2 Tbsp orange juice, freshly squeezed

  6. 1 tsp unflavored gelatin

    Dissolve gelatin in orange juice by heating in the microwave for 20 seconds or on the stovetop. Cool to room temperature.
  7. 1/4 cup whipping cream

  8. 2 Tbsp confectioners sugar

    In mixer, beat the whipping cream and sugar together until soft peaks form.
  9. 1 1/2 cups Greek yogurt (strawberry honey, other flavor, or plain)

  10. 1/4 cup almonds, chopped and toasted

    Fold the orange juice mixture and the whipped cream into the yogurt and almonds. Place it in your fridge and allow it to cool for about 30 minutes. Once your crust has cooled completely, pour the filling into the crust and then top with fresh raspberries. Serve chilled.

Options

You can make the tart any flavor you want by replacing raspberries with blueberries, strawberries or whatever is in season.  You can replace all-purpose flour with spelt flour or gluten-free baking mix.  Zest the oranges before juicing and fold the zest into the yogurt mixture.  This adds flavor along with antioxidants and other healthy phytochemicals.  To cut back on sugar content, omit confectioner's sugar or use less.  Try adding a sprinkle of nutmeg before serving.
