Griddle or skillet to medium
Griddle/skillet, small saucepan, grater or food processor
4 or more depending on ages
1 (8oz.) block RiceCheeze - Mozzarella Style, by LisanattiUse grater or food processor to shred.
1 can refried beans (reduced sodium & no hydrogenated oil)In saucepan warm the beans and then add the shredded cheese and stir well.
8 corn tortillasScoop about 2 Tbs. of the bean and cheese mixture onto the middle of 4 tortillas. Top each tortilla with another tortilla. Cook on griddle until warmed and tortillas are toasted, about 5 minutes, flipping over halfway through. Serve warm.
Serve with salsa and/or guacamole for dipping. For added color and nutrients, sprinkle cilantro or parsley on top of bean and cheese mixture before topping with tortilla. To save time, shred RiceCheeze in a food processor.
