Your kids will love the idea of having bunny-shaped crackers as croutons! Adjust this recipe according to what's in season or to your family's preferences. It's sure to be a hit.
Knife, cutting board, grater, large mixing bowl
10 minutes
6, depending on ages
6 cups shredded or finely chopped romaine lettuce
1 cup sliced cucumber
1 cup cherry tomatoes, halved or quartered
1 carrot, shredded or cut into matchsticks
Mix together in large bowl.1/4 cup organic ranch dressing
1/2 cup shredded cheese (organic, if possible)
1 cup Whole Wheat Bunnies, by Annie's Homegrown
Just before serving, toss with dressing. Then sprinkle with cheese and Whole Wheat Bunnies.
Replace ranch dressing with your family's favorite. Add any veggies or fruits that are in season. Try avocado, berries, dried cranberries, sliced black olives, or whatever your family prefers. Add fresh herbs if you have them. Leave off the dressing and serve it on the side for dipping.
