400 degrees Fahrenheit
Medium size saucepan, lid, baking dish

1 1/2 lbs. yellow potatoes, cut into 1 inch cubes (about 5 cups)
Add to saucepan with enough water to cover. Bring to boil. Reduce heat and simmer 5 minutes. Drain water and return potatoes to saucepan.2 Tbs. olive oil, extra virgin
1/4 tsp. sea salt
1 clove garlic, minced
1 1/2 tsp. fresh rosemary, chopped
Add to potatoes, cover and shake well to coat. Spread out in single layer on baking sheet and bake about 30 minutes or until golden brown, flipping over half way through.
This recipe works best with thin-skinned potatoes. Try red potatoes instead of yellow. Replace rosemary with any other herb. Add extra garlic if you'd like. Use 1/2 tsp. dried rosemary, paprika or parsley in place of fresh rosemary.
